Udi's Sponge Cake Mix





This sponge cake mix is very easy to use and all you need to add in with the mix is -

1/2 cup of dairy free spread,
2 eggs,
1 teaspoon of vanilla flavouring,
1/2 cup of water of you can use soya milk etc. (I used water)

I decided to leave the cake plain as that is how I love to eat cake. It tasted delicious and was very light and fluffy. (I used a petal shape sponge mould if you are wondering about the shape of my cake!) It literally melted in my mouth. It tells you on the back of the box how to make the sponge cake but you can basically make it how you want to and even add different ingredients.

Stuffed Peppers With Cous Cous | Dairy, Wheat and Gluten Free





As you may know by now i am a huge lover of food. With my previous food posts I am always on the hunt for new ideas being dairy, wheat and gluten free.  I love experimenting and finding new foods to try. 

Above is stuffed peppers with cous cous. Everything here is dairy, what and gluten free. I got the cous cous from Tesco in their free from range. I do find it a lot better though if you season the cous cous with some salt and herbs as this really brings out the flavours. It is completely up to you what you want to put with the cous cous. In the photo above I used a yellow pepper and cut in half and popped in the oven. I then chopped up some cherry tomatoes and mushrooms and added to the pan of cous cous once it had soaked up the water. I usually keep my peppers in the oven till they go a little soft. This doesn't take long at all to make and is very yummy and filling. On the side I added some spinach and some dairy, wheat and gluten free cheese, cut into small pieces.

Free From Breaded Fish






This free from breaded fish is great for if you love fish in bread crumbs but are unable to have dairy, wheat and Gluten. You can put whatever you want with the fish, i personally enjoy having fish with potatoes and salad. This is super quick and easy to make and tastes delicious. Below I am going to write what i used in the photo above.

Ingredients

Free From Bread,
Cherry Tomatoes,
Fish (Your Choice, i used Salmon)
New potatoes,
Tomatoes,
Sweetcorn,
Packet Salad. 

(Told you it's quick and easy to make!)

Firstly i get a couple slices of free from bread and crumble them in to a bowl. Next i add some little chopped up cherry tomatoes to add to it. You can also add some chopped up olives and pop in to the crumbs to, which i love to do. Next i get the piece of fish and pop on to a tray then sprinkle the crumbs on top. Sometimes the crumbs may not stick very well but what i like to do is leave the crumbs that don't stick to the fish on the tray and then let them cook and crisp up then the pop them on to the fish when everything is cooked. Whilst the fish is in the oven i then get the potatoes ready and boil in a pan until soft. (I usually keep the potatoes cooking until the fish is done, you can keep them on a  low heat heat if they are done before the fish.) Usually i cook the fish for about 30 mins or its up to you really how long you like to cook fish for. Next i start to prepare the salad. I used packed salad for this and then added tomatoes, cucumbers and sweetcorn to it. (The little purple bits you see in the salad isn't onion it is purple cabbage, as everything i make and eat has to be onion and onion powder free.) Once the fish is cooked i then just take it out the oven and pop on to a plate with the salad and then add the new potatoes.

Homemade Free From Fish Pie





My mum and myself have recently been thinking of different recipes we can try that are dairy, wheat and gluten free. I have always loved eating fish pie, but since having to cut out dairy, wheat and gluten i haven't had one of these for so long. This is super easy to make and tastes so delicious. 

Ingredients -

1 pack of Fish Pie Mix. (We got the one from Morrisons which has Cod, Salmon and Haddock in.) But can use whichever Fish Pie Mix you want.

Potatoes. (You can also use sweet potato if you want, or even cauliflower.)

Rice Milk. (You can use soya milk.)

Herbs. (We added some mint, parsley and coriander to gibe the fish pie some flavour.)

Free From Chesse.

Firstly we add the Fish Pie Mix to the bowl and pop in some rice milk, this makes it moist so it doesn't dry up whilst cooking. It also adds some extra flavour. Next we pop some potatoes in to the microwave, this just softens them up so they won't take long to cook in the oven. We then chop them up ready to put on top of the pie. Before we do this though we pop in some of the herbs that i listed above in the ingredients. This adds even more flavour to the pie. Then we pop the chopped up potatoes on top. We like to keep the skin on the potatoes as this makes them go nice and crispy in the oven. Lastly we get some of the free from cheese and put on top of the potatoes so it melts in the oven. With the Fish Pie we cooked some kale and put with the pie. This is a nice healthy meal to have and its also dairy, wheat and gluten free. As i said its super easy to make and you only need a few ingredients.

My Super Easy, Yummy, Healthy, Free From Breakfast






Breakfast is the most important meal of the day, they say. And its true, it really is. Breakfast helps to fuel the brain and body and gives us energy. Breakfast also can provide us with calcium, iron, vitamins, fibre and protein. 
Research also shows that people who eat breakfast every morning are less likely to put on weight as if we skip breakfast we are more likely to snack more and go for the sugary treats to give us the energy.
I for one love to have breakfast every morning and i always feel so much better after eating my breakfast.

Recently i have been trying to eat a lot more healthy and have been on the hunt for a yummy healthy breakfast that will gee me the energy i need and fills me up. In the photos above i have used the following for my breakfast -

1 Banana,
Plain or flavoured Soya yogurt,
Udi's Almond and Vanilla Granola.

This is all i use and it is super yummy and quick and easy to make.
Bananas are a good source of potassium, this mineral is essential for maintaining proper heart function and helping to regulate normal blood pressure. Bananas also aid in digestion, give you energy, they are particularly high in vitamin B6 which is important for creating hemoglobin for healthy blood. They have good levels of vitamin C, magnesium and manganese. 

All i do is pop the banana in to a bowl pour some soya yogurt over top, my favourite is the Alpro Soya Lemon and Lime flavour yogurt, as its very refreshing. Then after that i use sprinkle some Granola on top. This breakfast is dairy, wheat and gluten free.

Udi's

Being unable to have Dairy, Wheat and Gluten can be very annoying. If you too are like me then you will know how it feels. 
Gluten is a mixture of two proteins present in cereal grains, especially wheat, which is responsible for the elastic texture of dough. I have found it so hard since having to become dairy, wheat and gluten free to find products that i can eat. When you go in to a supermarket and you go to the free from section there isn't always much choice. Some supermarkets have started to expand their free from range and they now have quite a wide range of products. Udi's are a brand from America and have recently brought their range over to the UK. I was really excited to see what different products they do and I was even more excited when Udi's sent me over a hamper that was filled with the following goodies.

Au Naturel Granola

Ingrdients
Certified Gluten Free Oats (65%), Honey (23.8%), Rapeseed Oil.

Here is what i thought of Udi's Au Naturel Granola -
This granola is dairy, wheat and gluten free and is so delicious. This granola is great for just having on its own with rice milk or soya milk or even great to sprinkle on top of different foods. I am really loving and enjoying this product so much, i will definitely continue to buy this granola as i love having it in the morning before work. This packet also lasted me a quite a while as the granola is quite filling so you don't need too much. It has a great texture and isn't too sweet but has just the right amount of sweetness in it.

Almond and Vanilla Flavour Granloa

Ingredients
Certified Gluten Free Oats (59.7%), Honey (21.9%), Rapeseed Oil, Almonds (7.2%), Natural Flavouring (Vanilla).

Here is what i thought of Udi's Almond and Vanilla Granola - 
When I first opened the packet of this granola, I was hit with the sweet smell of the vanilla, which smells delicious. As I am unable to have dairy this is perfect for me, as this one same as the granola above is dairy, wheat and gluten free. This granola is just full of yumminess and is how i want a packet of granola to be.

In the photo above i got 1 whole banana and poured Soya yogurt over it and then sprinkled some of the granola on top, this is super yummy and also a healthy breakfast. Or you can just have the granola straight in the bowl and is lovely with rice milk. Theres so many different ways you can have this granola but this is just a couple of my favourites that i have for breakfast or even as a dessert. I love the texture of this granola and you would never know that it is gluten free.


Cinnamon and Sugar Bagel Chips

Ingredients
Tapioca Starch, Water, Potato Starch, Maize Starch, LiquidEgg White, Rapeseed Oil, Cinnamon Sugar Seasoning (Sugar, Brown Sugar, Cinnamon, Soybean Oil, Spices), Sugar, Thickeners (Guar Gum, Pectin, Sodium Alginate, Hydroxypropyl Methyl Cellulose), Acidity Regulator (Glucono Delta Lactone), Salt, Dried Egg White, Yeast, Raising Agent (Sodium Bicarbonate).

Here is what i thought of Udi's Cinnamon and sugar bagel chips - 
These cinnamon and sugar bagel chips are amazing. They are so addictive i just can't help myself but keep dipping my hand in the box. These bagel chips have a nice crunchy texture and taste so good. They are lovely and sweet and i especially love the cinnamon on them.

Soft n' Chewy Streawberry Flavoured Breakfast Bars

Ingredients

Strawberry Filling (27%) [Sugar, Apple Powder, Glycerine, Strawberries, White Grape Juice Concentrate, Water, Modified Tapioca Starch, Gelling Agent (Pectin), Antioxidants (Citric Acid), Preservative (Malic Acid), Natural Flavouring, Anti-Caking Agent (Calcium Phosphates), Colour (Black Carrot Juice), Acidity Regulator (Sodium Citrates)], Chick Pea Flour, Potato Starch, Fructose, Pear Juice Concentrate, Raisin Paste, Inulin, Rapeseed Oil, Tapioca Starch, White Rice Flour, Water, Microcrystalline Cellulose, Bacillus Coagulans GBI-30 6086, Raising Agent (Sodium Bicarbonate). Finished product contains 3% Strawberry.


Here is what i thought of Udi's Strawberry Breakfast bars -
These breakfast bars are nice and soft and taste so good. These are great for on the go or if you are in a rush. I can't get enough of them. I also like to have these as just a snack during the day when i get a little peckish in-between meals. You can even have them as a dessert if you really wanted to, which i did on a few occasions.

You can even tell in the photo above how soft they are and the strawberry centre, which is lovely and sweet.



Chocolate Chip Bagels

Ingrdients
Water, Tapioca Starch, Rice Flour, Chocolate Chips [10%] (Sugar, Cocoa Mass, Cocoa Butter, Emulsifier: SOYA Lecithin, Natural Flavouring), Potato Starch, Rapeseed Oil, EGG White Powder, Glucose Syrup, Resistant Corn Starch, Sugar, Humectant (Glycerine), Thickeners (Hydroxypropyl Methyl Cellulose, Xanthan Gum, Locust Bean Gum), Yeast, Pea Protein Isolate, Sugar Beet Fibre, Salt, Preservatives (Calcium Propionate, Sorbic Acid) 

Here is what i thought of Udi's Chocolate Chip Bagels -
These bagels are great for toasting, which is how i have mine. They have a lovely soft texture and doesn't crumble, they also contain lots of little chocolate chips, which i love. This is the first time i had ever tried chocolate chip bagels and i am hooked on them. Firstly i tried them just toasted and plain which they tasted so good on their own and then i thought to myself i wonder what they would taste like with peanut butter on? You know what, they taste amazing which peanut butter.

Above is a photo i took of one of Udi's chocolate chip bagels and put peanut butter on top. So delicious. Also i love to have peanut butter and jam together and this tastes as equally delicious on one of these bagels.


Soft and Tasty White Rolls

Water, Maize Starch, Rice Flour, Tapioca Starch, Yeast, Invert Sugar Syrup, Rapeseed Oil, Thickeners (Hydroxypropyl Methyl Cellulose, Xanthan Gum, Guar Gum), Psyllium Husk Powder, Potato Protein Isolate, Humectant (Glycerine), Sugar, Salt, Potato Fibre, Preservative (Calcium Propionate), Acidity Regulator (Citric Acid). May contain egg.

Here is what i thought of Udi's Soft and Tasty White Rolls - 
These soft white rolls have an amazing texture and are delicious. You can't tell that they are different from ordinary bread. They are great however you want to eat them, whether its toasted or just plain on their own. If you don't want to eat them straight you can just pop them in the freezer until you are ready to eat them and once defrosted they still taste nice and fresh. 

When i have purchased other brands bread and rolls i find they are so easy to break and crumble and you end up having pick about at your sandwich to be able to eat it. With Udi's products they don't do this which makes me love them even more. If there is one thing i don't like its a crumbly sandwich or roll! These keep really well and also stay whole when kept in a lunchbox.

I am obsessed with smoked salmon, so i popped some in one of these white rolls with some spinach and tomato and also put some of Udi's Cinnamon and Sugar Bagel Chips with it on the side.

Unfortunately i was unable to try these three products due to them having milk in the ingredients. But these three products look so good and let me tell you, they smelt so delicious. So instead my mum Stephanie ate them and here is her review on these three products:

Ancient Grain - Aged Chedder Crisps:
These crisps have a great texture and are nice and crunchy, as a crisp should be. As soon as you open the packet the delicious smell hits you and you just want to dive straight in. They also have a very strong flavour which i loved. You would never know that these crisps are made with different ingredients. They are very tasty and once the packet has been undone they keep their crunch well.

Ancient Grain - JalapeƱo Crisps:
These too have a great texture and crunch. They have a lovely flavour and are very 'moreish.' They are extremely tasty and as the same as the crisps above you would never know that they have been made using different ingredients. These crisps keep their crunch well after being undone same as the ones above.

Chocolate Chip and Toffee Flavoured Muffins:
These muffins have an amazing soft and moist texture. They are so good and delicious, great as a dessert or just a snack. It's also great that you get two different flavoured muffins in one pack and they stay nice and fresh once the packet has been undone.

Free From Pasta with Smoked Salmon and Vegetables





Pasta is such a simple dish, but there is so much you can add to it.
Its quick and easy to cook and you can just add just about anything thats sitting in your fridge.

Ingredients

  • Free from pasta, (Dairy, wheat and gluten free) 
  • Courgette,
  • Mushrooms,
  • Tomatos
  • Spinach,
  • Smoked Salmon,
  • Dairy, wheat and gluten free cheese,
  • Tomato puree.


Firstly I prepare my veggies, (Tomato, mushroom, courgette.) I pop some baking parchment on to a tray and place them on top to roast. I don't add oil or anything, I just have them plain. Whilst they are in the oven cooking i then trap a saucepan fill it up with water, leave it on the heat to boil then add the past. I usually cook my pasta for about 10 minutes. Usually by the time the pasta is done the veggies are also done. When the pasta is done, I like to add tomato puree to it and mix it in. I used to love tomato ketchup on pasta when I was little, but a lot of tomato ketchups that you but have ingredients in that I can't have. As tomato puree is just tomatoes I use this. Its also stronger so you don't need to use much, just enough to give the pasta some flavour. What I sometimes do is to add a tin of chopped tomatoes to the pasta this gives it a sauce. So after i have got the pasta sorted, I place some spinach on the plate first and then pop the pasta on top. I then take the veggies out of the oven and place these on top of the pasta. Lastly i place the smoked salmon on top and then add some free from cheese.

This is just a simple recipe of what I use when making a pasta dish. Its something different and as I said you can add just about anything really. It makes food a bit more interesting if you are unable to have dairy, wheat and gluten like me.

Homemade Vegetable Soup - Dairy Free, Wheat Free and Gluten Free.





If your like me and can't have Dairy, Wheat and Gluten, you will know how hard it is to find certain foods that you love.
I also can't have onions and onion powder, which is in everything!

I have been on the hunt for ages now for a soup in the supermarkets that doesn't contain any of these ingredients. I haven't had any luck so far.

So i decided that i am just going to have to make my own. I had it in my head that making soup even though it looks simple to make was still going to be hard to make, but with these few ingredients and a blender! You are able to create the perfect soup :)

Ok so im not a chef and no expert when it comes to making food, but having to cut out dairy, wheat, gluten and onions/onion powder, I have had to experiment.
You may make soup a lot differently and might not like how i made mine. But all i can say is that this soup is delicious and when you have waited a very long time to have soup again, its so good :)


Ingredients

1 tin of Chopped Tomatoes
Mushrooms
Peppers (Yellow, Red or Green can be used)
Spinach
Herbs
Water


I literally stuck everything in to a blender and blended it until i was happy then poured it in to a saucepan and cooked for about just under 10 minutes, or until happy with it.

I put a couple of slices of free from bread on the side too to dip in the soup. 

It is super easy to make and tastes so good. You can add whatever ingredients you want to yours, but this is something that i just put together. I haven't stated how much of everything i used because well that is up to you depending how much you want to make. I made enough for two people.

It might not seem much, but to me i felt so happy whilst eating it :) because i am sometimes quite limited to what i can eat, which you will agree with if you have to be on the same diet as me.

This is just a quick, easy recipe to use to make soup.

My day in food!

My day in food


It's so difficult to find things you can eat when you are unable to eat certain foods.
As i am unable to have dairy, wheat and gluten, i wanted to sure with you some of the foods that i eat.

I am definitely getting used to all of the free from food, to be honest i actually prefer it because most of it tastes so yummy and i haven't got to worry about it making me not very well.

I usually go to Sainsburys as they have the largest free from range. They have a lot of different things to choose from. I also get bits from Morrisons and also Asda have now got a bigger free from section. I also go to my local health shop to get certain bits like cereal, biscuits and dairy free cheese (which is so yummy) you can also get a dairy free cheese spread too! Hollanad and Barret also do these cheeses and they usually have some great offers on too. 

I forgot to take a photo of my breakfast, oops! But i usually have a bowl of gluten free porridge or some free from bread with jam and peanut butter. I also sometimes have a bowl of free from cereal.






Here i hava a dairy, wheat and gluten free bread roll, which are so nice, with a salad. In the roll i just have some of the dairy free spread and cheese with tomato and on the salad i have tomato, cucumber, cheese and olives.





For dessert i just fancied a pancake! random i know! 
I use the wheat and gluten free flour to make pancakes, with soya milk and eggs. I also usually cook my pancakes in coconut oil which is delicious and smells so good :) or i use extra virgin olive oil as i am unable to use any other oils. I put some maple syrup on mine.





For my tea, which may look like a strange mixture, i had mackerel in olive oil with wheat and gluten free macaroni pasta, which i got from Morrisons, with homademade cheese sauce. I made the sauce using my free from flour, dairy free cheese, soya milk and some dairy free butter. I also had some salad and broke up some free from bread that i toasted on top.


The hardest thing i have found is going out for meals, but there are some local pubs and restaurants that are amazing at making me something that i can eat. For example plain salmon with potatoes and veg, plain jacket potato with prawns and salad or maybe just a mixture of different items off the menu. Everything just has to be plain, no sauces and dressings. I also have to be careful and ask what they cook there food in and make sure there is no dairy in anything.

It would be wonderful though if more places would cater for people who can't have certain foods. I am unable to have onion powder and onion powder is in EVERYTHING! so i have to be really careful. My dietician is amazing and she helped me loads in finding out foods which i can and can't eat.  I also only eat fish, chicken and turkey as i no longer eat red meat. At least i can still eat chocolate, dairy free chocolate that is :) although its not the same and does taste slightly different its still yummy, and biscuits too!
