Roast Chicken and Mash | Dairy, Wheat and Gluten Free

Roast Chicken and Mash

For todays brand new blog post, I want to share with you this delicious roast chicken and mash. This definitely has to be one of my most favourite dishes. I've also loved having a roast chicken dinner ever since I was very young. You can't go wrong with a good roast dinner. Although this roast is a little different and not your typical roast, it tastes amazing.

In my previous recipe post, Homemade Rice Pudding, I wrote about how diet has been very important to me for quite some years now and even more so now. This month I was diagnosed with Crohn's Disease and diet is playing a key part in my life at the moment and will continue to do so. I love to create quick, easy and simple meals that are delicious. I don't use onion and garlic in my recipes either, along with no dairy, wheat and gluten.

Homemade Rice Pudding | Dairy, Wheat and Gluten Free

Hi everyone! I am really excited to share with you today, this delicious homemade rice pudding, that is dairy, wheat and gluten free. It is really quick and easy to make and you can make extra for the next day too. I must admit that I do have a sweet tooth and I do love having dessert. Sometimes it can quite tricky to know what to have when on a specific diet. You can get some really tasty free from desserts, but sometimes I find that they will be gluten free, but not dairy free. I do also find homemade desserts to be the best.

I have recently been diagnosed with Crohn's Disease this month and for the last few years, diet has been something that is very important to me, even more so now. You may have seen some of my other dairy, wheat and gluten free recipes on my blog. I am very careful when it comes to food and what I put in my body. I like to keep food simple, but I also like it to taste amazing at the same time. If you have followed some of my other recipes, particularly main course meals, you may have seen that I avoid using onions and garlic in my recipes. You can still create an amazing meal using just a few simple ingredients.

Propercorn Crunch Corn | Review

I am a huge lover of popcorn. Once I start eating some, I just can't stop. One of my most favourite brands of popcorn is Propercorn. Being dairy, wheat and gluten free, it's nice to know that there is a free from popcorn out there that I can eat. Usually if I'm out somewhere and i'm feeling a little hungry, I will most likely pick up a bag of sweet and salty popcorn by Propercorn to munch on, which is my favourite flavour by the way! I'm always on the lookout for something new and tasty to try.

Caprera

I love trying new things and sometimes this can be so hard being dairy, wheat and gluten free. Whenever I go in a supermarket and there is a new product that looks so good and I look on the back and see it has milk in it! This happens a lot. I was so excited when I received these products* in the photo above from Caprera. As soon as the parcel arrived I opened it straight away and dived in. On the Caprera website, there are lots products that are free from dairy, wheat and gluten and lots of new products I haven't tried or seen before.

Cinnamon and Sugar Bagel Chips

These delicious Cinnamon and Sugar Bagel Chips are great for snacking on and they taste so good and are very moreish...
I'm always on the hunt for something new and tasty to snack on. These *Bagel chips by Udi's Gluten Free are so good and definitely leave you wanting more. They are lovely and sweet and are nice and crunchy. I love having these for lunch with a sandwich or just on their own as a snack. Mmmm, they are making me hungry just looking at the photos of them! You could also use these with maybe a dip, or you could add a little butter on them, although I haven't tried this, but they are delicious just on their own. I love the whole combination of cinnamon and sugar along with the crunchiness of them. These bagel chips are great to place on the table if you are having some friends over or having a party. You can also get plain bagel chips, I haven't tried them ones yet, but I've heard very good things about them.

6. I also added some orange pieces on top for decoration.

I added everything together and then split the mixture in to two cake tins and popped them in the oven for about half an hour on gas mark 5. Banana Bread | Dairy, Wheat and Gluten Free

I have really been wanting some Banana Bread so bad recently. One of my favourite things to do is look for recipe inspiration on Pinterest, I have so many recipes that I have pinned so I can go back to them later. Click here to follow me on Pinterest. I love more simple recipes that don't have too many ingredients in them. But you can add whatever you like to the recipe, maybe a little cinnamon, some vanilla essence. Here is what I used to make this delicious Banana Bread.

2 Bananas,
1 1/4 cups of Gluten Free Flour/Bread Mix,
3 tsp of Baking Powder,
3/4 cup of dairy free milk. I used Coconut Milk.
1 Egg,
1 tsp Coconut Oil,
A little salt,
(You can use some sugar if you like but I used a little syrup instead, or you can use honey.)

This banana bread is super easy to make, I just mixed all of the ingredients together and popped it into the oven for about 1 hour on a low temperature. You can also add some oats into the mixture too, which is what I did the first time I tested out this recipe, but I decided not to add any this time. I can't wait to make this again, but maybe add some different fruit to it, like blueberries. It really does taste so delicious.

Vegetable Pasty | Dairy, Wheat and Gluten Free

IMG_4929

IMG_4931
I love baking, I find it very relaxing, or is it just me! I love being able to find new recipes and then make them. I'm a huge fan of Pinterest and I've been getting a lot of inspiration from there for recipes. I have so many I want to make. You can follow me on Pinterest by clicking here. I have so many recipes in my recipe inspiration board. I love being nosy and seeing what other people have been baking. I recently made a banana bread loaf which tastes amazing, so watch this space, I wanted to test it out first before posting it on here. I've also been getting a lot of inspiration from Ella's blog Deliciously Ella. Ella has a recipe on there to make your own dairy, gluten and wheat free chocolate with almond butter in the centre. They look so good and I really want to try making my own. I also like a challenge, a lot recipes I have looked at are not dairy, wheat and gluten free, so I love being able to re-create them and make them free from. Another recipe that I really want to try is making my own waffles. But first I need to get a waffle maker, so thats on the list.

You may remember my previous post using Udi's Pastry Mix when I made these delicious Jam Tarts. I saved some of the pastry mix so I could use it to make something else. Since becoming dairy, wheat and gluten I have often missed have a pasty, so I thought why not make my own using the Udi's Pastry Mix. They taste so delicious and  I decided to fill mine with potato, courgette and mushroom. I followed the instructions on the box on how to make the pastry, then once rolled out I cut the pastry mix in to circles for the pasty shape, I then popped on my filling and folded the pastry to create the pasty and then I put them in oven. I can't wait to get some more of this pastry mix as I have so many different ideas for recipes that I can use it for.

Also I will be having a giveaway on my blog this coming Tuesday.

2 Ingredient Pancakes

I am obsessed with these banana pancakes and the best thing about these is that all you need is two ingredients -

1 Banana,
2 Eggs.

They are so quick and easy to make and taste so good. I first found out about this recipe on Cassey Ho's Youtube channel, Blogilates. I have been obsessed with this recipe ever since. Firstly I get 1 ripe banana and mash it in bowl with a fork until it is all mushy and then pop 2 eggs in to the bowl and mix everything up. Next I like to cook using Coconut oil in a pan, I find the coconut oil adds that extra something when cooking and makes food taste even more delicious. But you can use whatever oil you like. Next I pop the mixture in to the pan, as you can see int he photo above the mixture makes 3 nice sized pancakes. I also like to put a little syrup on mine to add that extra sweetness and some blueberries. These pancakes are dairy, wheat and gluten free. I love that these pancakes only have two ingredients as I like to know what I am actually eating and I know exactly what I have put in them. They are so delicious and are great for breakfast.

Peanut Butter and Chocolate Chip Cookies | Dairy, Wheat and Gluten Free

These peanut butter and chocolate chip cookies are so delicious and very addictive! They are really simple and easy to make and are dairy, wheat and gluten free. All you need is -

200 g caster sugar
200 g gluten-free plain flour
100g of peanut butter
2 eggs
1 small pack of dairy free chocolate drops.

To make these I actually found it works better if you just mix all of the ingredients together in a bowl in no particular order! I was just experimenting around and found they turn out crunchier if I did this. After doing this I popped the mixture in to a baking tray. Rather than doing cookie shapes I just spread the mixture out. After about 20 minutes or so (or when they look nice and golden and crunchy) I popped the tray out of the oven, left to cool and then just cut them in to cookies. Not your typical cookie shape, but I find that by doing this you can have a lot more cookies, depending how big or small you want them. They are great to have as a snack or to pop in to your lunch box.

Peanut Butter Cookie | Dairy, Wheat and Gluten Free

I love finding new recipes to try, mainly because I am unable to have dairy, wheat and gluten, so it's nice to be able to find a delicious recipe. I am a huge fan of Cassey Ho and I especially love this peanut butter cookie recipe that I found on her Blogilates app. It is quick and easy to make, you just mix the ingredients together, pop in the microwave for 1 minute and its done. I am obsessed with peanut butter. For this cookie I used:

1tbs of Crunchy peanut butter
1tbs of Gluten free oats
1tbs of dairy free milk (I used soya)
1tsp Stevia
1 egg white

I mixed all of the ingredients together, then popped in the microwave for 1 minute and you have a delicious peanut butter cookie. I changed the recipe slightly and used gluten free oats. This cookie tastes so good, I can't get enough of them.

Homemade Dairy, Wheat and Gluten Free Bread

I've always had a bit of a love, hate relationship with baking dairy, wheat and gluten free bread, as some turn out better than others. This time I decided to bake some bread using Doves Farm Brown Bread Flour. In the past I have baked dairy, wheat and gluten free bread in a bread maker, but I found that the bread comes out a lot better baking in the oven. The recipe is really easy to follow, here is what I used:

450g Doves Farm Brown Bread Flour

1/2tsp Salt

2tsp Guten free yeast

2tbsp Sugar

350ml Warm dairy free milk

2 Eggs

6tbsp Oil (I used coconut oil.)

Firstly I Mixed together the flour, salt, yeast and sugar. In a large bowl I mixed in the milk and eggs. Next I added the flour and mixed it to form a sticky dough. I then added the coconut oil. Next I placed the dough in an oiled bread tin using coconut oil, covered and left to rise in a warm place for 1 about an hour. Finally I popped the bread mixture in a pre-heated oven for 40/45 minutes on 220ºC/Fan200ºC/425ºF/Gas 7.

I'm really happy with how the bread turned out and it tasted delicious. Doves Farm also do a white bread mix, so I'm definitely going to try that.

Please let me know in the comment section if you have tried Doves Farm Flour.

Homemade Dairy, Wheat and Gluten Free Jam Tarts

Udi's Pastry Mix is very easy to use and you can use it in so many different recipes. I decided to make these delicious jam tarts using Udi's Pastry Mix. They really are very yummy. I was so excited when I found out that Udi's do a pastry mix, as it is something I have been on the hunt for, for a long time. I love how this is an all purpose pastry mix, so you can use it in so many different pastry recipes.

The pastry mix contains -
  • Brown Rice Flour,
  • Potato Starch,
  • Tapioca Starch,
  • Sugar, Salt,
  • Thickener (Xanthan Gum)

The pastry mix by Udi's is dairy, wheat and gluten free and here is how I made these delicious jam tarts:

I decided to only use half the packet of pastry mix so I would have plenty left over for other recipes. I then added 1 egg to the mix, about half a cup of butter and a little water. Next I mixed everything together then put it in to the fridge for about 25 minutes to cool. I then got a cup and used it to make circle shapes for the jam tarts, after doing this I then popped them on to a baking tray and put some homemade jam in to the middle of each one. I left them in the oven for about 25 minutes.

I love how quick and easy it is to use the pastry mix and I am very happy with the outcome of these. I definitely plan on making more of these jam tarts. The mixture made 9, but I did make mine quite thick, so the mixture could have made more. I decided to use the mixture to make jam tarts because I do have a bit of a sweet tooth and these are great to have as a snack or even put in your lunch box. I am really looking forward to using the rest of the pastry mix in another recipe.

You can buy Udi's Pastry Mix from Tesco. You can also view the full range over at Udi's website

Check out my previous posts using Udi's Sponge Cake Mix and Udi's chocolate Brownie Mix.
